Why Checklists Matter

In a bakery, the first two hours of the day determine how the rest goes. A missed step at 4 AM — forgetting to pull dough from the retarder, not preheating an oven, or overlooking a wholesale order — cascades into problems all day long.

Checklists aren't about micromanaging your team. They're about making sure the critical steps happen every single time, even when someone is tired, new, or filling in for a sick colleague.

The Pre-Production Checklist

Before any mixing begins:

  • Check the production plan. Review today's plan and note any special orders or changes.
  • Pull retarded doughs. Any doughs in cold storage that need to come to room temperature for today's bake should come out first.
  • Preheat ovens. Start ovens early — most deck ovens need 30-60 minutes to stabilize.
  • Check ingredient stock. Quick visual scan of key ingredients. Are you good on flour, butter, eggs? Better to know now than mid-mix.
  • Review special orders. Any custom cakes, event orders, or wholesale requests that aren't in the standard plan.

The Production Checklist

During production:

  • Follow the work view. Check off each recipe as it's completed.
  • Record any substitutions. If you swapped an ingredient or adjusted a quantity, note it.
  • Log waste. Track any dough, batter, or finished product that doesn't meet quality standards.
  • Monitor oven temperatures. Record actual temperatures vs. target, especially for temperamental ovens.

The Pre-Open Checklist

Before customers arrive:

  • Display case is full and labeled. Every product in its place with current prices.
  • Register is counted and ready. Starting cash is verified.
  • Cleaning is done. Front of house is spotless. First impressions matter.
  • Team knows the specials. Everyone can answer "what's fresh today?"

Making It Stick

The key to checklist compliance is making it easy. A digital checklist that the team can tap through on a tablet is far more likely to be used than a laminated paper on the wall that everyone ignores.
